יוסף זקבך (נולד בברלין ב-1934) הוא חוקר, מחבר ועורך עשרות ספרים מדעיים בבוטניקה. לפני צאתו לגמלאות היה מרצה בכיר באוניברסיטה העברית.

יוסף זקבך נולד ב-1934 בעיר ברלין שבגרמניה, בהיותו כבן שלוש עלה וגר עם משפחתו בחיפה ואחר כך במושב בשדה יעקב בעמק יזרעאל, בו למד בבית ספר עממי. לאחר שנת לימודים בכפר הרואה, הפסיק את לימודיו כדי לעזור בפרנסת משפחתו. הוא שירת בנח"ל בשנים 1952–1954. לאחר השלמת בגרות אקסטרנית, השלים תואר ראשון בבוטניקה וביוכימיה מאוניברסיטת בר-אילן.

בשנים 1961–1969 שהה בארצות הברית לשם לימודים והשתלמות מקצועית. הוא למד במחלקה לבוטניקה של אוניברסיטת שיקגו של קליפורניה, וקיבל תואר שלישי ב-1965. השלים את לימודי הפוסט דוקטורט במכון הטכנולוגי של קליפורניה Caltech שבפסדינה (קליפורניה) ב-1968. ב-1967 לימד ביולוגיה באוניברסיטה של מדינת קליפורניה (CSU) ובשנים 1968–1969 עמד בראש מחקר חלל ביולוגי בשם "פרויקט נוגה" באוניברסיטת קליפורניה בלוס אנג'לס (UCLA).

לאחר שובו ארצה הצטרף לפקולטה לכימיה באוניברסיטה העברית בירושלים כמרצה בכיר בכימיה אורגנית והיה לעמית מחקר בקבוצת פרופסור ארנסט דוד ברגמן לחקר הכימיה של אצות.

במהלך השנים הבאות ערך מחקרים באוניברסיטת בר-אילן ובאוניברסיטת תל אביב, לימד בבית הספר לרפואה של האוניברסיטה העברית, בטכניון ובמכללת אריאל ועמד בראש קרן מחקר מטעם האקדמיה הלאומית הישראלית למדעים. לימד בבית הספר לתלמידי חוץ לארץ של האוניברסיטה העברית ובמכללה לבנות בירושלים. הוא היה המזכיר האקדמי והדיקן בבית הספר הגבוה לטכנולוגיה בירושלים. כמו כן, בשנים 1992–1998 הוא שימש מפקח ארצי למורי הכימיה במנהל לחינוך התיישבותי במשרד החינוך.

החל מ-1980 השתתף בעשרות רבות של פגישות מדעיות וכנסים מדעיים בינלאומיים בחו"ל, ושימש מרצה בתחומי מדעי החיים והאסטרו-ביולוגיה. עם קבלת מלגת DAAD מטעם ממשלת גרמניה עבד בשנת 1988 שלושה חודשים במחקר מדעי באוניברסיטת טובינגן ויצא לסבב הרצאות ברחבי גרמניה. ב-1990 יצא לשנת שבתון באוניברסיטת לוס אנג'לס ובהמשך גם באוניברסיטת הרווארד. בשנת 2006 קבל גם מלגת DAAD לשהייה באוניברסיטת מינכן.

בשנים 1997–1998 שימש ראש קתדרה ראשון וכפרופסור לביולוגיה באוניברסיטת לואיזיאנה (LSU) בבאטן-רוז, לואיזיאנה ארצות הברית.

ב-1994 הוציא את ספרו הראשון בהוצאת קלובר, והוסיף לערוך עשרות רבות של ספרי מחקר בהוצאות המדעיות של קלובר, הוצאת שפרינגר ובהוצאות נוספות.

מאז 1999 ועד היום משמש כחבר בוועדה לארגון כנסי אסטרוביולוגיה (SPIE), והחל מ-2013 הוא חבר ועדת העורכים של הירחון Life.

יוסף ורעייתו פרן מתגוררים באפרת. להם חמישה ילדים ושלושים ושנים נכדים. בנם אלי (אנ') הוא עיתונאי ואיש תקשורת בלוס אנג'לס.
